Cajun Rockfish & Shrimp Scampi by Roberta ("Bobber") Nowell
Ingredients:
1 1/2 cups margarine (3 Sticks) 1 teasthingy minced garlic 1 teasthingy salt 1 teasthingy cayenne pepper 1/2 teasthingy white pepper 1 teasthingy black pepper 1/2 teasthingy thyme 1 teasthingy basil 3/4 cup white wine 1/2 medium red onion sliced very thin, then chopped 1 pound peeled and deveined shrimp 1 pound rockfish fillets-skinless-sliced thin
In small bowl add all of the dry spices. Mix together. In medium saucepan, melt the margarine and add the garlicand dry spices. Cook until the margarine starts to bubble. Add white wine and red onion. Add rockfish and shrimp. Cook until rockfish is opaque and shrimp is pink.

This sounds very good,,,if I ever catch a striper from the beach, going to try this one out,,,thanks for the recipe!

Man that dose sound good, the way things are going I'll have to find a place that sells Rockfish.
