step 1) wash fliites step2) pat dry step3) vacum seal fillets step4) refrigerate step 5 drop off at bob23's house.

Barry - I just get mason jars, soak meat in brine for a few hours, pack into the jars, add a pinch of salt, lightly screw on lids, and pressure cook for 110 minutes.

Just did 4 pints last night, my method clean all the bad meat off the loins, boil off in salt water for 45 minutes pour off the foam and goop, set the cooked loins to the side to cool for handling cut the chunks so they will slide into the jar and leave 3/4" space at the top, add sea salt and pour full of hot water clean lip and place lid snug. Set up Pressure cooker very important tuna needs 100 minutes at 15 PSI when done and pressure is gone remove and set aside to cool, check that all lids sealed and store with content and date on the lid....its good for years, Walla let me know if you need more details.

Barry, I use pint mason jars. Start with 1/4" water in jar. Fill (pack it tight,the water will fill the voids) with 1 1/2" cleaned tuna chunks. Fill jars to 1/2" from top, add 1 tblsp of oil ( not from your truck ) and a dash of salt. Pressure cook @ 10#'s for 110 min. I've done bonito using this recipe and it is the only way to not waste bonito.

Jim, had my boat out for @ 3weeks to fix a trim tab that Short's had fixed twice before the wrong way. so I fixed it myself this time. Just got back in 3 weeks ago. Been out once since then for tuna trolling---no good though. Was out for sharks before the trim tab broke---no good either. Looks like the upcoming weekend won't be that good either. Of course by time I can go I'll probably have sold the boat--I hope anyway! I NEED A NEW TO ME BOAT. You guys settle on one yet?
