Potato/Parmesan crusted rock fish

This is what we had for dinner last night...

ingredients

4 rockfish fillet 8oz each
2 eggs
flour as needed
parmesan cheese 1/4 cup
instant potatoes 1/2 cup
veggie oil

mix parm cheese and instant potatoes together
wash fillets
dip in flour then eggs then potato parm mix
pan fry in veggie oil over medium high heat until done
drain on a paper towel then hit it with some lemon......
Dig in!!!
